Ingredients

Sweet potato curry

  • 2 medium Sweet Potatoes
  • 1 onion, white
  • 1 cup quinoa, rinsed
  • 1 cup dried brown lentils, rinsed
  • 1 can Coconut milk 400ml
  • 3.5 cups water
  • 1 tbspn veggie stock
  • 2 tspns curry powder
  • 1 tspn Each ground ginger, coriander, garlic powder
  • salt and pepper to taste

Recipe's preparation

    Chop
  1. Place quartered onion and pieces of sweet potato into Closed lid"Closed lid" and chop 3sec/speed 5. Leave chunky.
  2. Add all the other ingredients place lid with simmer basket and cook 40min/100 deg/speed .5 Counter-clockwise operation"Counter-clockwise operation" .
    When cooked place into thermo bowl and allow to rest to absorb the rest of the liquid.

    You can serve with dollop of Greek yoghurt and coriander leaves

Tip

You may use butterfly attachment after chopping.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Really enjoyed this healthy curry. Easy to make. The only thing was that both Total time and Preparation time were stated as 15 min and this therefore didn't include the 40 minutes cooking time. I think that the Total time was closer to 50 minutes. We served with pappadums and one of us had chicken on the side. Lovely. Thanks for the recipe.
