Ingredients
Nachos with beans
- 2 clove fresh peeled garlic
- 1 l onion, large, peeled and quartered
- 30 g coconut oil
- 1 tbsp Cumin Powder
- 1 tbsp coriander ground
- 1/2 tsp Chlli paste, to taste
- 1 can Tomatoes (canned diced)
- 3 tbsp tomato paste, or tomato sauce
- 2 can red kidney beans (400g), rinsed and drained
- some spinach, chopped
- salt and pepper to taste
- 1 tablespoon mollasses
- 4 button mushrooms, chopped

Place the onion, garlic in the TM bowl, chop for 5 seconds on speed 6, scrap down the sides, add the oil add the coriander and Cumin and Chile paste and cook for 3 minutes, 100 °, speed 1.
Add the tin tomatoes & tomato paste (or tomato sauce), spices and mollasses (mollasses is full of iron, magnesium and calcium and is much better than processed sugar), mix for 2 seconds on speed 3, just to combine these liquids.
Add the rinsed Red kidney beans, give a stir with your spatula to combine, cook for 5 minutes, 100 °, reverse, soft spoon.
Add chopped mushrooms and cook for a further 5 mins on 100o, reverse, soft spoon.
Mix for speed 3 for about 5 secs or until the desired texture is achieved.
Add chopped spinach cook a further 1 minute on 100o reverse, soft spoon or until wilted.
Can be served as nachos topping with tofutti, avocado, sweet chilli sauce, lime juice and chopped tomatoes or in a lettuce cup like a san choy bow or over quinoa.

I have made this many times now and love the depth of flavour of the dish. It is a dead set winner and must be tried! I slightly modify the recipe however as my husband is on a strict SCD diet. I used ECB vegetable stock paste instead of tomato paste and honey instead of molasses. Soak and cook dark red kidney beans before adding instead of canned beans as well, otherwise needs no modification...as is a great dish and gets the thumbs up!!

Made this today. I used Pomegrenate Molasses as I didn't have plain molasses, which would have given it a different flavour. However, the flavour was nice and I will try it on plain molasses next time. I also cook my red kidney beans instead of canned beans and used a little less oil. I enjoyed this recipe, Thanks.
