grind almonds 3secs speed 9 scrape down add sweet potato,herbs. and chop 3-5secs speed 5 ,you need to check every second or so to get right consistance you dont want mush just chopped so they cook and hold together. season salt and pepper
add eggs and mix through on reverse for few seconds speed 4
fry in oil on med heat till golden brown and cooked through you may add extra egg if bit dry i use dlarge eggs .

These are absolutely terrible. The sweet potato doesn't cook, it really needs to be sauteed before making them into fritters. They fall apart because they don't bind together properly. Even though I added more eggs and some flour to try get a good consistency. Just awful and a huge waste of ingredients.
How long do you cook it on the fry? Do you turn side?
I have the feeling that although golden brown, the sweet potatoe is still raw.
I found these quite difficult to handle as they fell apart easily. This made cooking them a very long and difficult process. I definitely had to use the third egg, and I think next time I will use four. Once cooked they were delicious and I love that they were a grain free option.
I've been looking for something different, this seems to be it, will certainly try it out tonight with a nice chili and sour cream dipping sauce
