Pasta Bake
- 1 onion, peeled and quartered
- 2 garlic cloves
- 20 grams olive oil
- 150 grams tomato paste or tomato pesto
- 400 grams can tomatoes, diced
- 2 teaspoons beef stock concentrate (or vegetable stock)
- salt and pepper to taste
- 500 grams Beef mince
- 250 grams dried pasta of choice, such as shells, penne or bowties
- 150 grams Grated Parmesan Cheese
- 150 grams soft goats cheese, crumbled, (or ricotta cheese)
- 100 grams fresh baby spinach leaves, (optional)
- a few fresh basil leaves, (for garnish)

- If using the TM to grate your parmesan, do this step first and set aside for later - grate cheese for 8-10 seconds on speed 8.
Place onion and garlic in TM bowl and chop for 5 seconds, speed 5.
Scrape down bowl, add oil and saute for 2 minutes, 100 degrees, spoon speed, MC OFF.
Add tomato paste or pesto and cook for 1 minute, 100 degrees, spoon speed, MC OFF.
Add diced tomatoes, salt, pepper and stock concentrate and cook for 3 minutes, 100 degrees, spoon speed, MC ON.
Place mince into TM simmering basket and spoon some of the sauce over the top of the mince. Put the basket (with mince inside) into the TM bowl with the sauce. Cook for 15 minutes, 100 degrees, speed1. About halfway through cooking break up the mince using a fork.
WHILE THE MINCE IS COOKING, prepare your pasta on stove top (or your preferred method) as per packet directions. Once the pasta has cooked, drain and sprinkle with about half of the grated parmesan cheese and stir through. Pour into a baking dish while you wait for the sauce to finish cooking.
WHEN MINCE HAS FINISHED THE FIRST COOK, tip mince out of the basket and into the TM bowl with the sauce. Cook for a further 5 mintues, 100 degrees, reverse, spoon speed.
Once the sauce is done, pour into baking dish with the pasta and mix until well combined. Stir through baby spinach. Top with remaining parmesan cheese and either goats cheese or ricotta cheese.
Bake at 180 degrees for 25 minutes.
Garnish with fresh basil leaves.

Perfect family meal! Was plain enough for my 2yo but still delicious for adults. I added some broccoli and peas i steamed with the pasta on the stovetop. Will add more veges next time like other people have mentioned in comments.

I was excited to try this but was very disappointed. It had no taste and was very bland. I followed the recipe exactly. Was also hoping it was a winner for my kids because they eat nothing but only one of them are it.
Fantastic recipe. I followed it but added 2 slices of chopped bacon to the meat, which I actually fried on the stove to ensure the texture was how we like it. Certainly a hit with grandsons 5 and 3 and daughter, husband and myself. Will definitely be making again... soon! Thanks so much.

I add zucchini, carrot and mushrooms too. And this is a bit strange but I don't make it in the thermomix!! I use this recipe and cook the mince mixture on the stovetop. I don't really like the texture of mince cooked in the thermo. Very delicious

Absolutely DELICIOUS!!!
I used ricotta cheese and parmesan, but I also added a light sprinkle of tasty cheese on top too!
I also used a splash of red wine!!
When serving I sprinkled some chilli powder over mine, and it was amazing!
My husband even asked if he could eat the melted cheese top off my dinner 😅 hands off!

This was really yummy and easier than I thought it was going to be. Next time I’d add a carrot too and maybe use ricotta instead of goats cheese, I love it but the kids don’t!
This recipe tastes amazing and so versatile you can add whatever flavours you like. I added some red wine, worcestershire sauce and chilli paste and the whole family raved about it. Will definitely be making this again.
