Ingredients
Chicken Alfredo
- 80 grams Parmesan cheese, cubed
- 1 clove garlic
- 1/2 Small brown onion
- 10 grams olive oil
- 300 grams cream
- 500 grams water
- 50 grams vegetable stock concentrate, (see EDC)
- 300 grams Spiral pasta
- 1 zucchini, halved lenthways and sliced
- 1/2 red capsicum, sliced
- 500 grams chicken thigh fillet, diced into 1.5cm pieces
- 1 tablespoon cornflour

Place cheese into bowl and grate 3 seconds/speed 8. Set aside.
Place onion and garlic into bowl and chop 5 seconds/speed 6. Scrape down bowl.
Add oil. Saute 2 minutes/100 degrees/speed 1.
Add 150g of the cream, water and vegetable stock concentrate to the bowl. Insert the basket, add the pasta. Place chicken in Varoma bowl and vegetables in the Varoma tray.
Cook for 20 minutes/Varoma/speed 4. Stir the pasta after 10 minutes.
Add the remaining 150g of cream and cornflour to the bowl. Combine 5 seconds/speed 3.
Cook for a further 4 minutes/Varoma/speed 4.
Place pasta, vegetables and chicken into a Thermoserver, pour over sauce and stir through parmesan. Rest for 5 minutes before serving.

Yummy dinner tonight for me and my two sons
I made this mostly per recipe except for not having zucchini or fresh capsicum, so substituted two fresh cut up carrots and some frozen broccoli, as well as adding a drained tin of capsicum after the first 10min of cooking time. Moved the chicken around too at the 10min mark which was a good thing. Knew carrot wouldn't cook properly but we all like raw carrot so not a biggie. Only had 280g cream which turned out to be a good thing, and overdid the parmesan by a little but then we love cheese! I also put 615g of diced chicken breast in (had no thigh meat) seeing as how I have a TM5. Eldest son (21) said it was surprisingly nice and youngest (17) said he liked it too. Another one for my collection of favourites.
Changed cream to coconut cream to make it dairy free, put back on to cook for another 10 minutes as pasta, veggies were still raw. But still not cooked so back on for another 5, will see how we go, sauce is now starting to thicken also. Smells really good!!
Very tasty Sunday night dinner. I reduced water by 100ml & substituted 100ml of white wine. Also reduced cream by 100g & replaced with natural yoghurt. Gave the sauce some extra tang that we like. Would also recommend adding a few mushrooms to the vege mix
Only new to Thermomix cooking and wasn't to sure about this one cooking pasta in Thermomix but thought give it a try well so glad I did tasted awesome and my son loved it another one for our favourite list 😃
This was delicious, however all the paste wasn't aldente.. I think I'd reduce the amount of pasta next time, or coat it in oil so it could move and not stick together. Great flavours! We may even try replacing the pasta with cauliflower!
