Ingredients
Risotto
- 50 grams Parmesan cheese, cubed
- 40 grams Butter
- 40 grams olive oil
- 320 grams arborio rice
- 60 grams white wine
- 1 tablespoon vegetable stock paste (see basic cookbook)
- 1 fillet chicken breast, cubed
- 2 handfulls of diced ham
- 1 sweet potato, cubed
- 1 bunch sweet potato leaves
- 750 grams water

1. Grate parmesan 10 sec/speed 10
2. Melt butter with olive oil 1 min/120 degrees/speed 1
3. Insert butterfly whisk. Add rice and mix 1 min/120 degrees/"Counter-clockwise operation" / speed 1.5. No MC.
4. Add wine 2 min/100 degrees/"Counter-clockwise operation" /speed 1.5. No MC
5. Add stock, chicken, ham, sweet potato and water and cook 13-15 minutes/100 degrees/"Counter-clockwise operation" /speed 1.5. Place simmering basket on top. In last minute or two of cooking add sweet potato leaves to basked to steam.
6. Risotto should be a little gluggy. Place in thermoserver to rest for five minutes.
7. Stir through sweet potato leaves and parmesan.
Tip
baby spinach can be substituted for sweet potato leaves.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
