Ingredients
Risotto
- 50 g Parmesan cheese
- 1 brown onion
- 2 garlic cloves
- 30 g olive oil
- 350 g arborio rice
- 100 g white wine
- 3 tbsp chicken stock
- 300 g chicken breast
- 200 g fresh mushrooms
- 1.1 l water
- sea salt and black pepper
- 150 g sundried tomatoes
- 40 g cream

Place parmesan cheese into mixing bowl and grate 10sec/speed 9. Set aside. Clean and dry mixing bowl.
Place onion and garlic into mixing bowl and chop 3 sec/speed 7. Scrape down sides of bowl.
Add oil and saute 3min/Varoma/speed 1.
Insert butterfly. Add rice and wine and saute 2min/100degrees/"Counter-clockwise operation" /speed 1.
Add stock, chicken (chopped into small bite sized pieces), mushrooms (chopped also) and water and cook 18min/100degrees/"Counter-clockwise operation" /speed 1.
Add sea salt and pepper to your liking. Add in grated parmesan, sundried tomatoes (cut in half) & cream. Mix for 30sec/"Counter-clockwise operation" /speed 1.
Risotto preparation - cut all ingredients into bite sized portions to begin with.
Tip
Add some spinach to add a fresh texture.

I made this tonight and it was absolutely delicious. The whole family loved it including both the 2 year old and the 10 month old. We added some frozen peas at the end instead of fresh baby spinach which was a great addition.

I have tried a few risotto recipes and my husband HATES them tonight he told me he hates risotto With a passion it’s the worst food ever HOWEVER 😋 .....he LOVED this one and even had 3rds 😯😯😯😯 it was really delicious thank you !! It will be added as a regular on our menu 😊

I was busy with other things while I cooked this... I forgot the sundried tomatoes & cream... Oops! But it was delic just the same.
