Ingredients

Gnocchi

  • 400 g potatoes, I didn't peel mine
  • 100 g Jerusalem artichokes, scrubbed clean
  • 50 g Milk
  • salt, to taste
  • pepper, ground, to taste
  • 225 g plain flour
  • 20 g Butter
  • 1 egg

Recipe's preparation

    Method
  1. Place potatoes and chokes into bowl.

    Add milk, salt and pepper - 20 min/Varoma temp/Counter-clockwise operation"Counter-clockwise operation" speed 1.5. Measuring cup off.
    (I turn the temperature to 98 after about 5 minutes)
  2. Allow potatoes to cool for about 15 - 20 minutes.

    Now smash for 10 sec/speed 4 Do not over process or puree!
  3. Add 75g of flour, butter and egg (if using).

    Knead 30 - 40 sec/Dough mode"Dough mode"
  4. Place remaining flour, along with dough, onto floured surface or ThermoMat.

    Work remaining flour into the dough until you achieve texture that is not overly sticky. (doesn't stick to fingers)

    Roll dough into a finger width 'sausage' shape and cut into approx. 2cm long pieces.

    Shape the gnocchi with a fork, grater or wooden gnocchi board.
  5. To cook.
    Place into pot of boiling water and cook until gnocchi has risen to the surface.

    Remove and drain with a slotted spoon.

    Serve with your favourite sauce.

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
