Ingredients

  • 1 onion, Halved
  • 2 cloves garlic, Peeled
  • 3 Chorzio, Halved and sliced
  • 20 leaves basil leaf, Handful approx 20 leaves
  • 125 grams white wine
  • 1 --- Capsicum, red, Small, sliced
  • 500 grams water
  • 2 tbsp EDC Veg stock paste
  • 300 grams Aborio Rice
  • 75 grams Parmesan cheese, Grated

Recipe's preparation

  1. 1. add the onion to bowl and chop for 5 seconds on speed 5. 

    2. Add garlic, capsicum, tomatoes and basil. Chop for 3 seconds on speed 5.

    3. Sauté for 5 minutes on Varoma speed 1.

    4. Add chirizo and cook for 2 minutes 100 degrees speed 1 Counter-clockwise operation"Counter-clockwise operation"

    5. Add wine, water, stock paste and rice 

    6. Cook for 17 minutes, 100 degrees speed 1 Counter-clockwise operation"Counter-clockwise operation"

    7. Placein thermoserver and stir through the parmasen cheese. Let sit for 5 minutes.

    This is by far our favourite risotto! I just have to keep remembering to get diced tomatoes!! More often than not, I leave out the chorizos as it's a bit spicy for my daughter, and it is still AMAZING!

    Our family's new favourite Risotto! Very tasty and no butter or oil! I used fresh tomatoes (450grams) from our garden, only had two chorizo sausages so I added some sliced mushrooms with the liquid.

    ok is it just me, but should the chorizo be cooked before adding to the recipe? No way would the chorizo I bought be able to be chopped as described while raw, they just squished.

    Loved this. Make sure you let it sit for the required time otherwise it may be a little wet/runny for your liking. chorizo in anything is a winner really tmrc_emoticons.;)
