Ingredients

Sauce

  • 400 grams Pure Cream or Cooking Cream
  • 4 cloves garlic, peeled
  • 20 grams Butter
  • zest of 1 lemon
  • Green Prawns, peeled with tails on, 6-10 prawns per serving depending on size
  • dash white wine, dry, (optional)
  • Salt & Pepper, adjust to taste

Pasta

  • 1.5 litres water
  • 500 grams Spaghetti Pasta (or your choice)
  • 20 grams olive oil (optional)
  • 1 teaspoon salt

To Serve & Garnish

  • Parmesan Cheese, freshly grated or shaved
  • Lemon wedges
  • Chopped Parsley or Watercress sprigs

Recipe's preparation

    Pasta
  1. Boil Water in TM bowl 15min/100°C/Counter-clockwise operation"Counter-clockwise operation" Speed 1

    Add Salt, Olive Oil & Pasta,

    Cook 8-10 minutes until al dente/100°C/Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" with simmering basket on top.

    Drain, set aside in pre-warmed Thermoserver.

  2. Sauce
  3. Place Garlic to TM bowl and chop 5 sec/Speed 4

    Add, butter, and lemon zest, sautee for 2 min/100C/Speed 2

    Add cream, wine, salt & pepper, cook for 25 min/90C/speed 2 with simmering basket on top.

    Add prawns, cook 5min/100/Counter-clockwise operation"Counter-clockwise operation" Speed 1, with simmering basket on top.

    Pour over pasta and gently combine, serve with parmesan, ttoo with parsley or watercress and a lemon wedge on the side.

Tip

If you prefer a thicker pasta sauce, consider using thickened cream or add cornflour. The sauce is otherwise quite thin, but intended this way and will thicken once combined with pasta. (It will thicken more if left to rest in a thermoserver prior to serving

If desired, add a squeeze of lemon to the sauce as its cooking for an extra citrus kick or once served.

You could also BBQ the prawns for that charred flavour and add to the pasta at the end.

Is also nice served with rice if you do not want pasta.
