Creamy Chicken and Basil Fettuccine
- 1 portion Fresh Fettucine, from BCB
- 1700 grams water
- 1 tablespoon Vegetable stock paste, from BCB
- 40 grams Parmesan cheese, Cut into pieces
- 2 --- chicken breasts, chopped into 2-3cm pieces
- 1.5 tablespoons fresh basil pesto, from BCB
- 400 grams cream

1. Blitz parmesan cheese on 10 seconds/ sp10. Set aside. Rinse and clean mixing bowl.
2. Place water and vegetable stock paste into mixing bowl. Please Chicken in varoma, season to taste with salt and pepper. Cook for 16 minutes/ varoma/ sp1.
3. Insert simmering basket. Place fettucine in simmering basket. Cook for further 3 minutes / 100 degrees / sp 1.
4. Discard water in bowl. Set pasta aside in thermoserver. Add cooked chicken, cream and pesto to bowl. Cook for 4 minutes/ 98 degrees / "Counter-clockwise operation" "Gentle stir setting" .
5. Add paremesan and pasta 1 minute / 98 degrees / "Counter-clockwise operation" "Gentle stir setting" .
6. Serve with extra parmesan, to taste.

Tip
To save time, use pre-cooked chicken.
For extra flavour, lightly grill chicken pieces first.

We absolutely love this recipe. The first time we made it I accidentally blitzed the chicken but it was so good. We prefer now to shred the chicken in the thermomix and have it that way. Seems to make the sauce thicker too

Did cook pasta on stove top, as only got store stuff, not made fresh.
I cooked this for my family and it was a hit. I read the comments before hand and did double the basil pesto. Thanks for a great recipe. Will definitely cook this one again.
I agree with most of these comments on this recipe.
Pesto had to be doubled as a minimum to get more flavour
Sauce was a bit runny.
I used 400g chicken and needed an extra 3 mins for cooking.
I used 300g fresh pasta and this cooked in time.
Still needs something else for some more flavour, perhaps garlic and onions
This was great for a quick meal. I think it needed more so I put baby spinach in mine.
this tasted great once I made a few adjustments .
i needed to out double the pesto through it . I used lite cream so I just used a bit of cornflour to get the desired thickness , I put a teaspoon of garlic in as I'm a garlic fanatic and seasoned with rock salt as it needed it .
I also added mushrooms and omg this dish was amazing !!!
I agree the pasta needed longer to cook , the chicken wasn't finished either but would have cooked whilst making the sauce . I also needed longer than 3 mins for the sauce and did about 10 mins extra to cook the mushrooms and to mix in my additional flavours
I tried this recipe. Added ribbons of carrots & zucchini in the deeper part of the varoma.
Took a fair bit longer for the pasta to cook, and ended up having to fry the chicken separately after the 16mins.
Probably because of the veggies underneath that blocked the steam.
Needed at least twice the pesto amt to get the flavour through.
Definitely best with either precooked fettucini, or fresh fettucini as directed.
It was ok, a bit bland, probably needs some finetuning.
