Ingredients

Fragrant 'Fried' Rice

  • 1 Head of cauliflower OR
  • 300 grams rice
  • 1 Lemongrass stalk
  • 2 cm ginger
  • 1 shallot
  • 3 garlic cloves
  • 150 grams frozen peas
  • 150 grams Frozen Corn
  • 10 grams oyster sauce
  • 10 grams soy sauce
  • 1 teaspoon fish sauce
  • 1 Juice of one lime
  • 3 eggs
  • 5 Bacon slices
  • 1 heaped tablespoons Chopped nuts of choice
  • 1/4 cup chopped coriander
  • 1/4 Cup chopped mint

Recipe's preparation

  1. If using cauliflower: break up florets and chop in bowl in batches- 7 secs on Spd 6 until rice like consistancy. Either add to Veroma basket or transfer to pan if you prefer a caramelised flavour OR
    if using rice: add 700mls water and 300g rice to bowl. Set thermi for 7 mins, 100deg at speed 2. Transfer to thermoserver.

    Add lemongrass, ginger, shallot, garlic and chilli (to taste) to bowl. Chop for 7sec Spd 5. Scrap down sides and chop again for 5secs spd 5. Add sesame oil and sauté for 2mins, 100 deg, Spd 2.

    Add sauces and juice. Cook for 1 min, 70deg spd 1. In the meantime weigh out peas and corn into varoma tray.

    Once cooked, transfer sauce to thermoserver. Add 500mls water to bowl and set for 10mins, veroma temp, Spd 2. Add the varoma with cauliflower (if using), and vegetables.

    While that's cooking, grill bacon. Whisk eggs and cook as desired (I cook them like an omelette). Chop and add to thermoserver along with the cauliflower if required, vegetables, and herbs. Top with a splash of soy sauce to taste and chopped nuts. Serve immediately.

Tip

To make a meal, add any shredded meats of choice to the rice. I've added left over roast pork.

This can be all done in the thermi. Add eggs to the top tray lined with wet baking paper and leave vegetables in the bottom tray with the cauliflower in the steaming step. Add chopped bacon in the sauté step, with reverse spd Gentle stir setting"Gentle stir setting" .

for a caramelised flavoured cauliflower, add 1tbsp sesame oil to the pan and cook cauliflower while stirring until cauliflower feels dry to stir. Add to thermoserver and cauliflower will be soft when served.
