Ingredients
Meat Sauce
- 1 onion
- 1 carrot
- 1000 grams Beef mince, You can use half beef/pork
- 4 cloves garlic
- 30 g olive oil
- 680 g tomato passata
- 400 g chopped tomatoes, (1 tin)
- 1 heaped tsp dried oregano
- 1 heaped teaspoons dried basil
- to taste Salt and pepper
- 30 g beef stock paste
- 40 g red wine
- 60 g tomato paste
Bechamel Sauce
- 1000 g Milk
- 80 g Butter
- 100 g plain flour
- 1 level tsp salt
- 3 pinches ground nutmeg
Lasagna assembly
- 250 g dried lasagne sheets, this will vary depending size of dish/number of layers
- 450 g mozzarella, fresh
- 2 level tablespoons parsley, freshly chopped

- Place onion, carrot, garlic and olive oil into mixing bowl and chop 5 seconds, speed 7. Saute 5 minutes, 120°C, speed 2.
- Add minced meat, use spatula to break up any big lumps. Saute 8 minutes, 120°C, reverse, speed 1.
- Add passata, tin tomatoes, tomato paste, stock paste, wine, dried herbs, salt and pepper. Cook 25mins, 100°C, reverse, speed 1.
- Place milk, butter, flour, salt and ground nutmeg into mixing bowl and cook. Cook 12 min, 100°C, speed 3. Add 30g of mozarella in the last minute of cooking
- Preheat oven to 180°C. Lightly grease a casserole dish and set aside.
- Cover base of casserole dish with a thin layer of Bolognese sauce.
- Place a layer of pasta sheets over the sauce, cover with another layer of Bolognese sauce, sprinkle with mozarella cheese and cover with a layer of Bechamel sauce.
- Repeat this layering process until all ingredients are used.
- Finish with a layer of Bechamel sauce, sprinkle with remaining mozarella cheese.
- Bake for 30-40 minutes (180°C). Allow lasagne to rest for 10-15 minutes before serving.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
