Ingredients

Mushroom and Spinach Creamy Pasta

  • 300 g Dry Corkscrew/Spiral Pasta
  • 50 g parmesan
  • 2 tbsp Corn Flour
  • 550 g water
  • 1 tbsp veggie stock paste
  • 10 g Butter
  • 200 g button mushrooms, thickly sliced
  • 200 g Baby Spinach Leaves
  • 200 g thickened cream
  • 100 g Milk, Full cream
  • pinch salt
  • black pepper, to taste

Recipe's preparation

  1. 1. Weigh Pasta in simmering basket and rinse with cold water (set aside)

    2. Add Parmesan and Corn Flour to TM, grate 5sec/speed 8/MC on and set aside. No need to rinse TM

    3. Add water to TM and pre-heat 5min/veroma/speed1/MC on

    4. Add cream and Veggie Stock Paste to water in the TM. Then place steaming basket with pasta into TM bowl. Cook pasta 10mins/steaming/ speed 2/MC on

    5. Stir pasta and fufrther 5min/steaming/speed 2/MC on. After 5mins is complete, stir pasta agian and repeat 5min/steaming/speed 2/MC on.

    6. While pasta is cooking, add butter to a fry pan and fry mushrooms till lightly browned. Add spinach on top for approx 5-10 sec (do not over wilt). Remove from heat and set aside.

    7. Once pasta is cooked through, remove from TM. Do not drain remaining liquid! To the remaining liquid, add reserved parmesan cheese, milk, and black pepper to TM, cook 2mins/100degrees/speed 4/MC on

    8. Add pasta, mushrooms and spinach back to TM, combine 8sec/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting" /MC on

    9. Serve into Thermoserver and allow to thicken as it cools for 2 mins. Top with extra parmesan and enjoy tmrc_emoticons.)

Tip

Note: Continue to cook pasta as described in Step 5 until pasta is aldente - Depending on the brand of pasta used, I find twice is enough, but sometimes I need to repeat step 5 a 3rd time.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
