Ingredients

RISOTTO

  • 600 grams lamb strips
  • 2 tablespoons Bahart spice, Middle eastern spice mix
  • 1 Brown onion peeled halved
  • 4 cloves garlic
  • 100 grams Dried soft figs
  • 100 grams dried apricots, roughly chopped
  • 30 grams Olive Oil.
  • 40 grams pomegranate molasses
  • 400 grams Arborio rice
  • 1 litre water
  • 2 tablespoons veggie stock, Or beef stock
  • 100 grams Fetta Cheese, optional
  • 100 grams Toasted chopped walnuts
  • 100 grams toasted pine nuts, optional

Bahart spice mix

  • 4 tablespoons black pepper
  • 2 tablespoons Ground Coriander
  • 2 tablespoons ground cumin
  • 2 tablespoons ground cloves
  • 1 teaspoon ground cardamon
  • 1 tablespoon ground nutmeg
  • 4 tablespoons smoked paprika

Recipe's preparation

    Risotto
  1. Marinate the Lamb in the spice mix for at least 2 hours.

    Add onion and garlic to the bowl and chop 5 seconds/speed 5.

    Add Olive oil and saute 3 mins/Varoma speed 1

    Add marinated Lamb and cook 5 min/100 degrees Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"

    Set aside but do not washout the bowl. Best to leave a bit of marinade in the bowl

    Insert butterfly

    Add rice and pomegranate molasses (can add a bit more oil)

    Saute 1 min 100 degrees/ speed 2

    Remove butterfly

    Add water and veggie stock

    Cook 10 minutes, 100 degrees Counter-clockwise operation"Counter-clockwise operation" speed 1

    Add lamb and chopped fruit

    Cook 3 minutes 100 degrees,Counter-clockwise operation"Counter-clockwise operation" speed 1

    Place in Thermoserver and rest for 5 minutes

    To serve, sprinkle nuts and fetta over the top

     

Tip

You can use use dates as a substitute or additional.Just keep the quantity to 200 gms of fruit

Make your own spice mix. Store in an airtight container for 6 months
