Ingredients

Rainbow Fried Rice

  • 250 grams brown rice, Presoak for 30 minutes
  • 1/2 brown onion
  • 250 grams bacon
  • 100 grams salami
  • 70 grams Brocoli, roughly broken up
  • 70 grams cauliflower, roughly broken up
  • 2 carrots, cut in 3
  • 1/2 red capsicum, cut in half
  • 2 stalks Celery, Leave the leaves on extra nutrition and colour
  • 70 grams pumpkin, roughly chopped
  • 4-5 leaves fresh basil
  • small bunch fresh parsley
  • 1 can Chickpeas drained
  • 4 eggs
  • 20 grams olive oil
  • 2-3 tablespoons soy sauce or tamari, (optional)
  • Salt and pepper, to season

Recipe's preparation

  1. Pre Soak Brown rice

    Place Onion and bacon in the bowl and chop for 5 seconds speed 6

    scrape down sides

    Add olive oil and saute on Varoma/1min 30/speed 1

    remove and set aside in thermo server or large heat proof bowl

    add salami,broc,cauli,carrots,capsicum,celery,pumpkin,basil and parlsey

    Chop 3-5 seconds/speed 6 (depending on how small or chunky you like it do it more or less)

    Add a splash of olive oil and saute on varoma for 3-4minutes Counter-clockwise operation"Counter-clockwise operation" speed 1 or longer for chunkier veges.

    Add to onion and bacon mixture in reserved dish

    Prepare Varoma tray and line with baking paper

    add eggs to bowl and whisk 5 seconds speed 4 and pour into varoma tray with baking paper.

    Place 500grams water to mixing bowl and place varoma into position.

    Cook 15 minutes/varoma/speed 3 Or until egg is cooked.

    once cooked allow to slightly cool and chop into small squares and add to the cooked reserved ingredients.

    Place rice in simmering basket and rinse. Add to bowl. Add 800grams water and cook for 25-28 minutes on 100 degrees/speed 4.

    Use the spatula to remove the basket fluff with a fork and add to the reserved ingredients

    OR cook rice on Automatic if using TM5

    Add the drained chickpeas and mix it all together with Soy sauce and salt and pepper(optional)

     

Tip

Top with a dollop of natural greek yoghurt or sour cream for something different

Add cooked chicken for a chicken fried rice.
