Ingredients

Roasted Tomato, Pumpkin and Chicken Risotto

  • 250 grams cherry tomatoes, halved
  • 250 grams Pumpkin, cubed
  • 20 g Extra Virgin Olive Oil Spray
  • 1 tablespoon EVOO (extra virgin olive oil)
  • 1-2 cloves garlic
  • 1 Brown onion, quartered
  • 1-2 portions Chicken Fillets, diced
  • 400 grams Aborio Rice
  • 1 heaped tablespoon vegie stock
  • 1-1.5 l water, (Use 100 ml white wine if preffered)
  • 50-100 grams Parmesan cheese, cubed
  • 6-8 leaves basil leaves, fresh, roughly torn
  • 4-6 leaves oregano, fresh
  • sea salt and black pepper to taste

Recipe's preparation

  1. 1. Preheat oven to 180c. Place halved cherry tomatoes and cubed pumpkin onto an oven tray. Spray with Extra Virgin Olive Oil, spray for 1-3 seconds. Place in oven and cook for approx 20 minutes.

     

    2. Meanwhile, place cubed Parmesan cheese into TM bowl and grate 10 seconds/speed 9. Set aside. Clean and dry TM bowl.

     

    3. Place garlic, brown onion into TM bowl, chop for 3 seconds/speed 6. Scrape down bowl. Then add olive oil, saute  garlic and onion for 2 minutes/Varoma/Speed 1.

     

    4. Insert Butterfly. Add rice, wine (if using), basil and oregano and saute 2 minutes/100 degrees/Counter-clockwise operation"Counter-clockwise operation" /speed 1

     

    5. Add stock, chicken and water and cook 8 minutes/100 degrees/Counter-clockwise operation"Counter-clockwise operation" /speed 1.

     

    6. Scrape down sides of bowl, and stir, continue cooking for a further 10 minutes/100 degrees/ Counter-clockwise operation"Counter-clockwise operation" /speed 1. Remove Butterfly

     

    7. Pour into Thermoserver, season with sea salt and black pepper to taste and stir through parmesan cheese (leaving a small amount to garnish). Add oven roasted tomatos and pumpkin and stir well.

     

    8. Allow to rest for 5 minutes in Thermoserver.

    9. Serve and top with additional parmesan - if desired

Tip

* The risotto will appear a little liquid in consistency when poured into the ThermoServer , but will continue to absorb liquid the longer it rests.

* Occasionally to change things up a little, I will add bacon and ommit the tomato.

* I love this recipe and have cooked it since my daughter was a toddler - as the pumpkin & tomato (remove skins)can be mashed into the risotto - hidden veggies!!

    How much water are you meant to use please? Is it meant to be 1-1.5 litres plus wine?? That sounds like a lot
