Ingredients
Spicy Mango Chicken Pasta Salad
- 250 grams frozen mango
- 80 grams mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp honey
- 1 tbsp apple cider vinegar
- 2 tbsp chilli flake, dried, (Optional)
- 250 grams Dried Pasta
- 1 red capsicum, Chopped in small pieces
- 1/2 red onion, Thinly sliced in half moons
- 2 spring onions, Sliced
- 150 grams chicken, Chopped/shredded

- Take your mango out of the freezer. Cook your pasta following packet instructions. Drain and place in a large bowl. Slightly oil and stir to avoid sticking.
meanwhile.... - Add a glut of oil into the Thermomix bowl with the red onions and capsicum. Cook 10mins/100c/speed1. Remove and add the big bowl with pasta. Add in the spring onions, chicken and some coriander if you you would like and stir around. Leave that to the side while you make the dressing.
- Add mango, mayo, mustard, honey, vinegar, chilli flakes (if using) and S&P to the bowl and blitz starting at speed 6 gradually increasing to 9. After 30 seconds or so scrape down the sides and blitz again until you have a really smooth paste (it may look like a pale yellow slushy but this is absolutely fine as it will warm up with the pasta).
- Stir through pasta mix and check for seasoning. Add more chilli if you would like and fresh coriander if that is your thing
Tip
Use any type of pasta, I use bow ties as it holds all the dressing in the creases
You can use any chicken, I use shredded chicken that has already been cooked but you can of course poach and shred or cook chicken strips if you prefer
i have found frozen mango to be best as fresh or tinned mango is too stringy but if you want to use fresh, chop into small pieces before blitzing to try and avoid the stringy bits as much as possible

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
