Ingredients

for the Risotto

  • 100 grams Parmesan cheese
  • 2 --- Long Red Chilis (de-seeded)
  • 2 cloves garlic
  • 100 gram Sun-dried Tomatoes (well drained)
  • 30 gram Oil (from sundried tomatoes)
  • 320 grams arborio rice
  • 100 grams dry white wine
  • 1 litre water
  • 1 tablespoon vegetable stock powder

Recipe's preparation

    How to steps.....
    • Grate parmesan cheese for 10 seconds at speed 9, set aside

     

    • Place chilies and garlic; chop 5 seconds on speed 7

     

    • Add oil (I use the oil from the sun-dried tomatoes jar) and cook for 3 minutes, at 100 degrees, speed 1

     

    • Add (drained) semi-dried tomatoes; chop 5 seconds on speed 7

     

    • Add wine and rice; cook for 2 minutes, at 100 degrees, reverse, speed 1 Counter-clockwise operation"Counter-clockwise operation"

     

    • Add water and stock powder; cook for 16 minutes at 100 degrees, reverse, speed 1 Counter-clockwise operation"Counter-clockwise operation"

     

    • Pour risotto into a serving dish; add grated Parmesan cheese, stir and leave to stand for few minutes.

     

    • Apply directly to mouth and enjoy!!

    This was my first attempt at risotto in my new Thermomix and both my husband and I were imprssed. Next time I'd probably include the seeds from half of one of the chillis as it didn't have much kick. But the tomato flavour was lovely.

    Yum did this today for lunch added some prawns near the end will definitely do again
