Ingredients
Zesty Middle Eastern Pearl Couscous
Dressing
- 4 x 10 cm Lemon peel
- 6 sprigs fresh mint, Leaves only
- 1 clove garlic
- 40 g lemon juice
- 40 g olive oil
- 1.5 level tsp cumin seed, ground
- 2 level tsp paprika
- half level tsp salt
Salad
- 300 g carrot
- 1 red capsicum
- 200 g pearl couscous
- 3 --- handfuls rocket
- 100 g feta cheese
- handful Pepitas
- 4 sprig fresh mint, leaves only

- 1. Place lemon rind, mint and garlic in the bowl. 6sec Sp9.
2. Add lemon juice, olive oil, cumin, paprika, and salt. 5sec Sp6.
3. Pour into a jug and set aside.
4. Do NOT clean mixing bowl - 1. Preheat oven 180.
2. Peel carrot and cut into chunks.
3. Put carrot into bowl. 4sec Sp 4.5. You want it chunky.
4. Pour onto baking tray.
5. Cut red capsicum into long slices about 1cm thickness.
6. Toss with carrot on tray and cook in oven (bout 40mins - I like mine a little crispy).
7. 1L of water into the bowl. Insert simmering basket. Pour in couscous. 15min/100degress/Sp4.
8. Pour cous cous into large bowl to cool.
9. Add rocket, mint leaves, half feta, cooked veggies and dressing (see tips). Toss.
10. Put in serving bowl and crumble over the remaining feta and scatter pepitas.

Alterations -
- You could use pumpkin/sweet potato instead of carrot
- Add a tin of CHICKPEAS
- Add CHICKEN tenders in the varoma when cooking couscous
This recipe makes a generous amount of dressing. Adjust to your taste. I made it generous to allow for chicken or extras.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
