- 400g can Beetroot, Drained (reserve about 2 tablespoons of juice)
- 1/2 med.-large lemon, juiced
- salt and pepper to taste

I'm cooking this todayRecipe's preparation
1. Mince garlic then place Cashews & Parmesen in TM bowl, turbo 2-3 times until fine. Leave in bowl.
2. Add beetroot to cheese/cashew/garlic and turbo until desired consistencty is achieved & scrape mixture down into the bowl.
3. Season with S&P, lemon juice & add reserved juice. "Gentle stir setting" until combined.

Great dip. It's my go to when we have guests over and everyone always comments on how nice it is. I add 50g of fetta as well.
Made this for a christmas party and it was amazing. Will try adding more beetroot in next time as the parmesan taste was very strong.
