Ingredients

Bumbu Bali - Balinese Spice Paste15

  • 150 g garlic cloves, Skins removed
  • 100 g piece fresh ginger, Peeled and sliced into coins
  • 150 g galangal, fresh root, Peeled and sliced into coins
  • 40 g piece fresh turmeric
  • 5 g coriander seeds
  • 5 g Black Peppercorn
  • 10 g fresh red chilli
  • 10 g shrimp paste, (Also known as belacan)
  • 10 g candlenuts
  • 30 g oil, Flavourless is best
  • 1 stalks Lemon grass, Chopped into 3 pieces and squashed with the flat side of a knife
  • 1 pieces bay leaf

Recipe's preparation

    Making your delicious spice paste!!
  1. Put the lemongrass and bay leaf into your internal steaming basket, and set aside.
  2. Place all remaining ingredients in your Thermomix bowl. Chop for 10 seconds/sp7.
  3. Insert your Internal Steaming Basket.
  4. With the MC in place, Cook 10 minutes/120 degrees/sp1
  5. Remove the Steaming Basket and keep bay leaf and lemongrass to one side.
  6. With the MC in place, Blend ingredients 1minute/sp 5-9 increasingspeedgradually.

    Scrape down the bowl and reblend if necessary.

    (depending on whether your candlenuts are super fresh or a little old you may need to blend a couple of times to get a smooth consistency).
  7. Pour into a hot sterilised jar until half full. Poke the bay leaf down one side, and the lemongrass pieces around the other outer edges. Continue to fill up your jar.

    Remembering that it’s really hot, tap gently to get ingredients to settle. Top up as necessary.
  8. Pop your lid on and store in the fridge. Every time you use some paste, pour some oil over the paste to maintain a seal.

Tip

You will need a large sterilised jar.

To stérilisé your jar wash it really well in hot soapy water, rinse, then fill with boiling water right next to the sink. Place the lid in a bowl and cover with boiling water.

Be very, very careful emptying the water out. Preferably use a canning jar grip to hold your jar, but failing that protect your hands with a thick towel.

Once you’ve emptied out the water the jar will remain very hot!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
