Ingredients
Butter
- 600 gram Full Fat pouring Cream
- 500 gram Water (chilled)
Chipotle and Coriander mix
- 4 piece chipotles
- 2 clove garlic
- 1/2 bunch coriander
- Salt and freshly ground black pepper to taste

In a clean dry TM bowl, insert butterfly.
Place cream into bowl and whip 2 minutes / speed 4 or until solids and liquid seperated.
Remove butterfly
Using the TM basket strain liquids, reserving buttermilk for later use if desired.
Place water over butter solids in TM bowl and mix 5 - 10 seconds / speed 4. Liquid and solids should again seperate.
Using the TM basket again, strain liquid from solids again to that only butter remains.
Set butter aside in TM basket.
Wash and dry TM bowl
Place all ingredients for the Chipotle and Coriander mix in clean dry TM bowl.
Mix for 10 seconds / speed 8.
Place prepard butter in TM bowl with blended ingredients.
Mix for 30 seconds,
"Counter-clockwise operation" , speed 4.Remove mixture from bowl and place on baking paper and roll into a log. Chill for later use.
Can be frozen and sliced and use as required.
Beautiful melted over BBQ/Grilled corn cobs.

I love this recipe!! We smear it over corn cobs....either from the BBQ if we're feeling fancy, or just plain ol' steamed corn from the varoma.
