Ingredients
Sauce
- 2 onion, Medium size
- 2 clove garlic
- 10 grams coconut oil
- 150 grams crunchy peanut butter
- 165 grams coconut milk
- 1 carrot chopped
- 1 stick celery chopped into chunks
- 110 grams raw unsalted whole cashews
- 1 chilli red, chopped

Peel and quarter onion. Adding the carrot chilli,and celery too.Place into Thermomix bowl. Peel garlic. Place into Thermomix bowl.Chop for 5 seconds, speed 7.
Place coconut Oil into Thermomix bowl.Sautee Onion and Garlic mix for 3.30minutes, 100 degrees, Speed 1.
Scrape down Thermomix bowl with spatula.
Add remaining ingredients. Leave a handful of nuts for decoration at service.Cook for 3 minutes, 100 degrees, Speed 2.
Sauce
Tip
This will produce a thick, crunchy, semi-sweet caschew satay sauce. Goes really nicely with chicken, vegetables and rice.Use smooth peanut butter if you wish to have a less crunchy sauce.Great for kids, as it is mild and semi-sweet.
