- 1 leek, White only
- 2 cloves garlic
- 20 g canola oil
- 500 g hot water
- 60 g flour
- 1 heaped tbsp stock paste, FS Vegetable/Chicken etc
- 1 tsp salt
- 2 tsp brown sugar

- Add leek & garlic to the bowl. Blitz 3 Seconds/Speed 9.
Scrape down the sides. Add oil and saute 3 Minutes/100 degrees/Speed 3.
Add flour, brown sugar, salt, FS stock paste, and hot water. Cook for 9 minutes/100 degrees/speed 2.
Use MC. Blitz Speed 4, turning all the way up to speed 10 slowly. About 1 minute in total.
Don't expect this to turn out like gravy, but it is nice to dip chips in.
Tip
If you want a thicker gravy, add more flour.
I left a little bit of green on my leek which added more of a green colour than I'd like in the photo. Try adding saffron strands soaked in hot water for a different colour.
If you can tolerate it, blitzing a bit of cooked meat through it makes it taste amazing. You would have to eat immediately though and I wouldn't be in the elimination phase.
