Melt Butter in TM bowl. 1 minute, Varoma, speed 2.
Add flour and cook 7 minutes, Varoma, speed 3...whilst...
Activating scales and gradually adding milk through lid over MC.
Season with salt and pepper to taste.
Makes one cup.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Too strong for my tastebuds so I add an extra half a cup of sunflower oil which helped. Next time I will try 100g of garlic. Very easy recipe to follow and great texture. Tustin Concrete & Masonry Pros

I'm a new Thermomix user and was looking for an easy, basic white sauce to replace my stovetop one. This is spot on, though I found speed 2 worked better than 3 for cooking - perhaps because I doubled the recipe... I have a TM31 so can't use scales while cooking - I just poured the milk through the hole 1/2 cup at a time (doubled recipe) every minute-and-a-half or so. Thanks!
Simple but great replacement for just using the microwave to make white sauce. I added a half cup of grated cheese just before the end.
So easy & just the usual ingredients, I added seeded mustard to go with corned beef
