Ingredients

Sauce

  • 1 teaspoon whole cloves
  • 2 cloves garlic
  • 1000 grams tomatoes, quartered
  • 300 grams Rapadura Sugar
  • 315 grams Brown Vinegar
  • 1 teaspoon liquid smoke
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1 1/2 tablespoon plain flour, mixed with a little cold water to form a paste

Recipe's preparation

    Sauce
  1. Place cloves in TM, speed 8, 10 seconds.

  2. Add garlic, speed 7, 3 seconds.

  3. Add tomatoes, speed 6, 10 seconds.

  4. Add sugar, brown vinegar, liquid smoke, cayenne pepper, salt & pepper. 30 mins, varoma, speed 3, replace MC with basket.

  5. After 30 mins, replace MC & slowly turn from speed 1-9, for 1 minute.

  6. Add plain flour mix, 10 seconds, speed 9. 

  7. 5 mins, varoma, speed 4. Place simmering/rice basket on top in place of MC.

  8. Pour into sterilised bottles.

    Yum
    I use Smokey paprika instead of liquid smoke and use cherry tomatoes for thickening instead of adding the flour. Also reduce the sugar.

    Does it need to be kept in the fridge and how long does it last?

    I use a little smoked paprika or Tabasco with chipotle. We have also made a batch and put it in a shallow glass dish while smoking ribs or brisket to give it a smoky flavour - fantastic over ribs too in the slow cooker.

    hi, does anyone know if this sauce would be good for smoking meat? Currently my fiancée uses “KC Butt BBQ Sauce” which is quite expensive and was wondering if it could handle long low temp cooking ima. Smoker? If anyone happens to know, thank you Smile

    Can very the Heat and sweetness by adding extra chilli or less sugar.
