So easy to make and so tasty. Unfortunately my TM6 had a conniption and said the motor was too hot so I had to make it cook at 120 degrees for the second batch.

Do you think coconut sugar could be used rather than other sugars mentioned?

Delicious!I had 120gm strawberries that needed using so smashed them with potato masher to release flavour and sprinkled with a little sugar to macerate a bit while getting rest of ingredients together. Made up to 600gm with the mango. Was quite thick so may reduce cooking time by about 5 mins and give longer f necessary. My father in law has 3 mango trees so very cheap jam for me. Will also try just mango next time.

Thank you for the recipe. I had very ripe mangoes so I liked the fact that you showed less sugar. To be honest I had 1200g mango and 300g sugar. It is still sweet. I reckon this would be terrific in the middle of a jam sandwich cake. ( Victoria Sponge ) I did not cook it in the TM because of the quantity. I have about another 20 mangoes to use up!
