- 4 cans canned diced tomatoes, 400g each
- 400 g onions
- 400 g white sugar
- 2 level tsp salt, fine
- 200 g vinegar, white, Divided
- 3 level tsp mustard powder
- 2 level tsp curry powder
- 1/4 level tsp cayenne pepper
- 1/4 level tsp ground turmeric
- 2 level tbsp cornflour, (If needed)
- 4 level tbsp tomato juice, Reserved

- Drain tomatoes in varoma basket - retain juice if needed to thicken at last stage.
- Peel and quarter 400g Onions and place in mixer bowl
- Chop Onions 3 seconds/speed 6 then add reserved tomatoes
- Add 400g White sugar
- Add 2 teaspoons fine salt
- Add 150g White Vinegar
- Cook 10 minutes / 100deg / reverse / soft stir - preview next step
- While tomato mixture is cooking - in a small bowl put 3 teaspoons mustard powder; 2 teaspoons curry powder; 1/4 teaspoon cayenne pepper;1/4 teaspoon turmeric and mix to a paste with remaining 50g vinegar.
- When tomato mixture has finished cooking add in spice paste that you have made in the previous step giving it a stir through with spatula and cook 30 minutes / 100 deg / reverse speed / soft stir with varoma on top with jars upside down for sterilizing
- Once finished - if still too runny make paste with cornflour and reserved tomato juice - cook a further 5 minutes / 100deg / reverse speed / soft stir - pour into sterilized bottles and seal with lids - leave to cool
Tip
If you want extra spice you can double the cayenne pepper
