Ingredients

  • 1/2 bunch flat-leaf parsley, large stems removed
  • 1/2 bunch basil, leaves only
  • 3 sprigs Tarragon
  • 1 clove garlic
  • 1/2 avocado, room temperature
  • 3 tablespoons coconut milk, room temperature
  • 3 tablespoons lemon juice, room temperature
  • 2 --- anchovy fillets, room temperature
  • 1/4 teaspoon sea salt
  • 125 g extra-virgin olive oil

Recipe's preparation

    Green Goddess Dressing
  1. Place a cup or small jug on top of the Thermomix, set the scales to zero (tare) and weigh 125g Olive Oil into the cup.  Set Aside.

  2. Add garlic clove and washed & dried herbs (Basil, Parsley & Tarragon) to the Thermomix bowl and chop 3-5 seconds on speed 7.  Scrape down and repeat until fine consistancy is achieved.

  3. Add avocado, coconut milk, lemon juice, anchovy fillets and salt to scraped down herbs and process on speed 5 until well combined.

  4. With the motor running on speed four and with the MC in place in the lid, slowly pour the oil onto the black lid of the Thermomix and allow it to drizzle into the bowl to emulsify.  This process may take up to 3 minutes or so. 

  5. Season to taste.  Store in the fridge for up to 5 days in an airtight container.  Use this on meats and salads as a delicious, fresh way to add pizazz on a week night!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
