Ingredients
Sauce
- 2 Red shallots, small size
- 1 clove garlic
- 1 red chilli (seeds optional)
- 1 level teaspoon curry powder
- 20 g olive oil
- 150 g crunchy peanut butter
- 20 g fish sauce
- 15 g fresh lemon juice
- 20 g brown sugar
- 180 g coconut milk

Peel and half shallots. Place into Thermomix bowl.
Peel Garlic. Place into Thermomix bowl.
Chop for 5 seconds, speed 7.
Scrape down and repeat if necessary.
Place Olive Oil and Curry Powder into Thermomix bowl.
Sautee Onion, Garlic and Curry Powder
for 3 minutes, 100 degrees, Speed 1.
Scrape down Thermomix bowl with spatula.
Add remaining ingredients.
Cook for 5 minutes, 100 degrees, Speed 2.
Sauce
Tip
This will produce a thick, crunchy, medium-spiced peanut satay sauce. Goes really nicely with chicken, vegetables and rice. It should not be too oily - don't adjust olive oil - use a good quality peanut butter otherwise you will have too much oil - I took a cup of oil off one batch using cheap peanut butter! Enjoy...

Definitely needs a few more ingredients to give it some kick. I added extra garlic, soy sauce and sweet chilli sauce. I think the optional chilli in the ingredients list should be added in step 1. I missed it, so added a whole dried chilli in the cooking process then removed it.
This recipe is amazing. Tastes soo good and so easy This will be a regular on my menu now. Thanks so much for a fantastic recipe.
Definitely too oily, I will try to adjust next time I cook it, but it was delicious. I added about a tablespoon of soy sauce and a teaspoon of ginger as well.
Best satay sauce ever! I use this recipe all the time.
Super delicious, easily as good as you get in a restaurant. I've made it many times and use peanut butter made in the Thermomix, and vegan fish sauce.
