Ingredients

Dressing

  • 2 Garlic gloves, peeled
  • Inch square piece fresh Ginger, peeled
  • 1/2 to 1 fresh Chilli or 1/4 tsp Chilli Flakes
  • 1/4 cup SMOOTH Peanut Butter
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons fresh lime juice
  • 3 tablespoons vegetable oil
  • 1 tablespoon soy sauce or tamari
  • 2 tablespoons honey
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 3 sprigs Fresh Coriander finely chopped, if adding

Recipe's preparation

  1. 1. Place garlic, ginger and fresh chilli in bowl and chop for 3 secs / Speed 7, scrape down bowl and repeat.

     

    2. Add all other dressing ingredients to bowl, MC in, and blend for 6 secs / Speed 5.

     

    3. Add in coriander if using and pour into clean bottle or jar. Refridgerate.

     

    4. Shake well before use

     

Tip

I use preservative free Peanut Butter; PIC's brand (red lid with black star) made in NZ from Aussie Kingaroy peanuts! Available from Coles; is a little dearer but has a fantastic superior flavour. Comes cruchy as well, good for Satay sauces.

Allow dressing to stand at least an hour to develop flavours.

Dressing will keep up to a week in fridge, less if adding coriander.

Can be used as a dressing for any Asian inspired salad.
