Ingredients

  • 400 grams butternut pumpkin, deseeded, cut into 1cm pieces (approx)
  • 100 grams Baby Spinach Leaves (approx)
  • 120 grams Feta Cheese, crumbled

Dressing

  • 20 grams honey
  • 20 grams balsamic vinegar
  • 10 grams extra virgin olive oil

Recipe's preparation

  1. Using square of wet rung out baking paper, line the varoma tray and place pumpkin pieces on top.

  2.  

     

    Add 1L water to TM Bowl and Place Varoma into position and steam 17 min, varoma temp, Sp 2.

  3. Lightly stir pumpkin to ensure it is evenly cooked. If it needs a little longer, cook a further 5-8 min, Varoma Temp, Sp2 , or until pumpkin is cooked through.

  4. Set pumpkin aside to cool completely

  5. Dressing Method
  6. Weigh in dressing ingredients and mix 5 sec speed 5.

  7. To assemble:
  8. Using a large flat platter, place spinach leaves first onto the platter.

    Top with cooled steamed pumpkin, then sprinkle feta cheese over the pumpkin.

    To serve: Pour over dressing and enjoy!

Tip

This recipe is traditionally done with Roasted Pumpkin, but can so easily get burnt in the oven and I think it turns out just fine steamed! If you wish you can lightly sautee your pumpkin pieces on a pan before steaming to get the 'roasted' effect!

Otherwise if using leftover roast vegies, then it's just a dressing task in the Thermie! Works well with carrot, sweet potato and regular potato also.

This salad is also delicious with approx 70g lightly pan-toasted walnuts or pinenuts (use dry pan), then remove and add to pan approx 150g thin strips of crispy prosciutto or bacon added, as well as 1/4 red onion, sliced.

    Wow! This salad is amazing, worth the effort, restaurant quality! I recommend sautéing the pumpkin in a frying pan before steaming. I also added the toasted walnuts, bacon and red onion. The honey dressing is delicious. I could eat this everyday. YumLove
