Ingredients
Asian Spiced Sweet Potato, Carrot and Coconut Soup
- 400 grams sweet potato, peeled and roughly cubed
- 400 grams carrot, peeled and roughly chopped
- 60 grams onion, peeled and halved
- 10 grams coriander root, with 2cms of stem
- 40 grams Sweet chilli sauce
- 50 grams olive oil
- 1 heaped tbsp Thermomix Vegetable Stock Concentrate, As per receipe in Everyday Cookbook
- 600 grams water
- 200 grams coconut milk
- sour cream, for garnish if desired

Place onion and coriander roots into TM bowl and chop for 3 seconds, speed 7
Add olive oil and saute for 2 minutes at 100 C on speed 1.5
Add sweet potato, carrot, sweet chilli sauce, veg stock concentrate and water and cook for 30 minutes at 100 C on speed 1.5
Add coconut milk and blend for 15 to 20 seconds by going very slowly from speed 1 to speed 10.
Season with salt and pepper to your tastes, extra sweet chilli if you desire, then re blend on speed 10 for 10 seconds to mix through.
Garnish with a dollop of sour cream and a sprig of coriander.

Thanks for sharing this recipe! I have now made it twice and love,love,love it! The sweet chilli gives it a lovely mouth warming feeling without being overwhelming. My two year old also loves it.

My favourite soup - this is beautiful and so easy! I have made this SO many times now and it never fails to please. I use double the amount of Sweet Chilli Sauce and NO salt or pepper - YUM
