Ingredients

  • 1 leek, White section only, roughly chopped
  • 1 tablespoon oil/butter for greasing
  • 400 grams cauliflower, roughly chopped
  • 1 turnip (or swede), peeled and quartered
  • 2 tablespoons TM vegetable stock concentrate
  • 500 grams water
  • dash paprika, optional
  • Salt & Pepper optional, to taste

Recipe's preparation

  1. Chop Leek for 4 seconds on speed 5 and scrape down sides

    Add oil/butter and cook 2 minutes, 100 C on Speed 1. While that's cooking, I prepare the turnip and cauliflower.

    Weigh in the turnip and cauliflower. Measurements can be approximate. Chop for 5 seconds on Speed 5-6


    Add stock and water, cook 20 minutes, 100 C, speed 1.

    Add paprika, salt & pepper as required and turn the dial slowly up to blend for 1 minute on speed 10.






    Note: I have made this without the turnip and it needed the addition of cream at the end. With the turnip, it has a beautiful creamy consistency.









    This is also nice served with a bit of parmesan cheese.






    My stock paste is made with reduced salt from EDC recipe so if yours is full salt, you may want to reduce the quantity of stock, and definitely don't add anymore salt to it.

    I added a little more cauliflower but otherwise used all the same amounts of ingredients and could not eat it as it was so bitter. Didn't improve with garlic so unfortunately had to throw it away.

    Added approx 20g of Parmesan (which I grated first!) this added a subtle but kid friendly cheesy taste.

    Delicious healthy soup! I made this with 2 turnips, a half of a sweet potato and some butternut pumpkin and added 3 tablespoons of cooking cream (as I wasn't sure if it was going to be creamy enough - although I think it would be fine with or without this).

    YUM!! We'll definately make this again over winter. Thank you

    I made this without the turnip and it was deleicious. I added nutritional yeast (being a vegetarian) which gave it some extra umph! I like my soup a little chuncky so it was perfect. Making it again this week, adding red lentils this time.

    Used a potato instead of a suede (didnt want to go to shops lol) soup was light and creamy and very tasty heaps better than cauliflower soup !

    Amazing soup! I added a clove of garlic at the beginning and substituted turnip for potato. next time, I'll try putting in more cauliflower as I think there was room in the thermite for a larger quantity.
