Ingredients

Soup

  • 2 tsp cumin seeds
  • 1 tsp coriander seeds
  • seeds from 2 cardamon pods
  • 1/4 tsp chilli flakes
  • 1 tsp ground tumeric
  • 2 Onions
  • 4 cloves garlic
  • 1 Tbsp oil
  • 750 g water
  • 1 Tbsp Vegetable Concentrate
  • 450 g coconut cream
  • 1 Tbsp Apple Cider Vinegar
  • 1 large head of cauliflower

Recipe's preparation

  1. Place Cumin, Coriander and Cardamon seeds in TM.

     

    Dry roast 5 minutes/ 120 Degrees/ Speed 2

     

    Mill 30 seconds/ Speed 10. Set aside.

     

    Place onion and Garlic in TM Bowl

     

    Chop 5 seconds/ Speed 5

     

    Scrape down sides, add oil and Saute 4 minutes/ 120 Degrees/ Speed 2

     

    Add ground spice, chilli flakes, tumeric and Saute 4 minutes/ 120 Degrees/ Speed 2

     

    Add rougly chopped cauliflower. Chop 5 seconds / Speed 5

     

    Add remaining ingredients, and  Simmer 98 Degrees/ 25 minutes/ Speed 2

     

    Blend 1 minute/ Speed 9 -  for a smooth creamy texture.

Tip

Serve with  bacon dust - made by frying bacon pieces until crisp then milling at speed 9 to make a crumb/dust

The texture of the Cauliflower combined with the subtle spices cooked in coconut milk are an excellent combination. As an alternative you can replace half the cauliflower with  red kumara.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     i used coconut milk instead of water and coconut cream and tasted great, hubby is my tester and said I can make this anytime he usually doesnt like cauliflower

    Carrie Muir: I followed the directions and added all the liquid.. but that was after I chopped the cauliflower in a few batches as well. Lowers the level of solid food to fit all the liquid in.

    I made a half batch to use up my cauliflower.
    I subbed the water and coconut cream for just full cream milk and it was still delicious.

    Hi, I'm ver new to Thermomix but am having a go at making this soup. I have the TM5 and wondering, is it normal for the machine to struggle chopping the cauliflower? I had to do it in batches and at the end there were still some very large chunks. Also, after adding the water the level seemed to be quite high so I didn't dare add the coconut cream as I'm certain it would have overflowed. What am I doing wrong?

    Yummo love it will cook again. Only had half cauliflower so not as thick. But very nice
