Ingredients

Soup

  • 500 gram Chicken thigh fillets
  • 400 g Tinned tomatoes
  • 400 g Tinned Black Beans
  • 400 g Tinned Kidney Beans
  • 1 brown onion, Peeled and halved
  • 2 cloves garlic, Peeled
  • 2 tablespoon taco seasoning
  • 500 g water
  • 2 tablespoon Vegetable stock paste
  • 20 g olive oil
  • sour cream, To serve
  • 200 g Frozen Corn
  • 1 Handful fresh parsley

Recipe's preparation

  1. Place onion and garlic into thermomix bowl and chop 4s /sp 7.

    Add taco seasoning and olive oil and saute for 3m/100deg/sp 1.

    Add tomatoes, stock paste and water to bowl, warm for 8m/Varoma/sp 2.

    Add steaming basket to mixing bowl and place chicken fillets into basket. Cook for 20m/Varoma/sp 2.

    Carefully remove steaming basket.

    Add rinsed black beans, kidney beans and and frozen corn to thermomix bowl then replace steaming basket. Cook for 5m/Varoma/ Counter-clockwise operation"Counter-clockwise operation" sp 2.

    At end of cooking time remove steaming basket and set aside, pour soup into thermoserver and stir through fresh parsley.

    Put chicken fillets into thermomix bowl and shred 6s / sp 4Counter-clockwise operation"Counter-clockwise operation" . stir shredded chicken through soup, and serve with sour cream. ENJOY!

Tip

I use thermomix homemade taco seasoning - however the old el paso stuff would work just as well if you don't have time. You can use more seasoning if you prefer a stronger mexican flavour.

We will often stir in a chopped red chili with the beans to turn up the heat on this dish.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

    This was such a winner - miss 9 and Miss 11 enjoyed it as well - we will add some chilli next time just to give it a kick. I also used 600g chicken to make sure there was plenty and it worked out fine. We will add this to the winter rotation

    I just made this for dinner as it looked interesting... Was pleasantly surprised how tasty it was!! Will definitely be making it again!
