  • 2 bonless chicken thighs
  • 2 medium brown onions
  • 1 tbls olive oil
  • 2 cloves garlic
  • 1 carrot
  • 1 red capsicum
  • 1 spring onion
  • baby potatos (half kilo?)
  • 1 1/2 litres water

Recipe's preparation

  1. Chop 1 of the brown onions & garlic in the bowl - speed 6 for 3 seconds. Add the olive oil and sautee on Varoma, 5 minutes speed 1. Fill the bowl to the 1.5 litre mark with tap water, blend on speed 9 for 10 seconds. Add Vegie Stock Concentrate. Set TM to Varoma temp, 45 minutes, reverse speed 1.

     

    With the Tm cooking away - dice the chicken into about 1cm cubes and add through the hole in the lid. Dice the other onion and carrot and put that in through the lid too. Dice potatoes to about 1cm cubes and place in the Varoma (I put some in the bottom and some on the tray). Place on Thermomix to steam.

     

    Dice capsicum into 1/2cm cubes and set aside. Cut the spring onion on an angle into very thin slices and set aside with the capsicum.

     

    Sit back and relax a while.

     

    When the TM calls check the spuds are cooked to your liking. Add the capsicum and spring onion to the soup.

     

    To serve: Spoon some potatoes into soup bowls, pour in the soup using the spatula to coax the chicken and vegetables into each bowl.
