Ingredients

Soup

  • 1 onion or leek, Roughly Chopped
  • 2 carrots, Roughly Chopped
  • 1 zucchini, Roughly Chopped
  • 1 clove garlic, Peeled
  • 1 tbsp ghee, oil or butter
  • 1 - 2 tbsp chicken stock paste
  • 150 g quinoa or brown rice
  • 1 litre water, Approximately
  • 500 g skinless chicken fillets, Cut into 3 or 4 pieces
  • 150 g frozen peas

Recipe's preparation

    Soup
  1. Weigh Quinoa or Brown rice into a container. Cover with boiling water and leave to soak for at least 10 mins.

    Add Vegetables and Garlic to bowl. Chop Speed 4 - 5 until you get the desired size.

    Add Ghee, Oil or Butter.  10 Mins, 100deg, Counter-clockwise operation"Counter-clockwise operation" Sp 1

    Drain and rinse Quinoa or Rice.  Add to bowl.

    Add Chicken Stock Paste (to taste).

    Fill bowl  to about 2 cm below the MAX line with water.

    Put Chicken Breast in the Varoma Dish and put in place.

    Cook for 30 mins, Varoma Temp, Counter-clockwise operation"Counter-clockwise operation" Speed 1.  Check that Chicken is cooked.  Put on for a couple more minutes if not.

    After cooking remove Varoma Dish and add frozen peas.

    Cook for 10 mins, Varoma Temp, Counter-clockwise operation"Counter-clockwise operation" Speed 1.

    Transfer Soup to ThermoServer.  No need to clean bowl.

    Add Cooked chicken and shred on Counter-clockwise operation"Counter-clockwise operation" speed 3 - 4 until it looks the way you want it.

    Add Chicken to soup in Thermoserver and stir.

  5. If you want to use Chicken Thigh Fillets, dice them first and add with the vegetables.

    Leave out the Quinoa or Brown Rice if you wish.

    Any vegetables can be used.

    Vegetable stock paste can be used.

    Really nice soup and loved by all. I used vegetable stock as I don’t make the chicken. Used left over roast chicken and it gave it a lovely flavour.

    Really a lovely soup. Ingredients I usually have in my fridge. The shredded chicken being added afterward makes more soup than a normal thermo soup which is great.
    I have made it with quinoa & with brown rice. Yummy both ways. Thanks

    Wow. This was such a hit tonight for dinner. Mine ended up quite thick as I did add a fair bit of extra veg but was still delicious! Great flavour, I probably over did it a little with the stock. Yummo! Thanks for a quick and easy staple winter soup!

    This was absolutely awesome and sensational. So easy to use - I added brocolini and extra garlic and ginger as I had it in the fridge. Flavours were sensational!!!

    Yummy. Great for winter dinner, especially when your littlest has a sore throat.
    I made exactly as per recipe and wouldn't change a thing.

    Made this tonight and it is incredible! What a great recipe, so easy and flexible.

    I have the flu, so I added a 3cm piece of ginger, 1 tbsp tumeric, and 3 extra cloves of garlic. Also, just because I had them on hand, 6 parsley sprigs, 3 celery stalks, and one rather large silverbeet leaf which I shredded into ribbons with a knife and added with the peas.

    I was a bit disappointed with how watery it was when it came time to add the peas, however that's my fault for not checking it was a TMX31 recipe - I have a 5 which is a bit bigger. Once it finished cooking and stood for a bit it did thicken up somewhat but next time I'll add a bit less water - just my personal preference though.

    I think next time I'll give it a whirl with soup mix, barley, or lentils, instead of the quinoa/rice.
