Ingredients

Chicken and Corn Soup

  • 3 stalks spring onions/shallots
  • 3 cloves garlic
  • 10 grams olive oil
  • 210 grams canned creamed corn
  • 210 grams canned sweet corn kernels
  • 1 litres Liquid Chicken Stock
  • 500 grams chicken breast
  • 2 level tbsp soy sauce
  • 2 level tsp cornflour
  • 2 eggs, beaten
  • to taste cracked pepper
  • to taste salt

Recipe's preparation

  1. Put the chicken breast in the mixing bowl and fill with water to just cover the meat. Cook 5min/98deg/revsp Counter-clockwise operation"Counter-clockwise operation" .
  2. Continue to simmer for 3min/80deg/revsp Counter-clockwise operation"Counter-clockwise operation" . Then leave to stand for another 10min.
  3. Drain away the chicken water, reserving for later use. Shred the chicken 3s/revsp4 Counter-clockwise operation"Counter-clockwise operation" . Set aside.
  4. Place the spring onions and garlic into the Thermomix bowl. Chop for 5 seconds, Speed 5. Scrape down the sides and repeat.
  5. Add the oil and saute for 3 minutes, 100 degrees, Speed spoon mode Gentle stir setting"Gentle stir setting"
  6. Add the creamed corn, corn kernels, chicken stock, and shredded chicken and cook for 15 minutes, 100 degrees, Reverse Counter-clockwise operation"Counter-clockwise operation" Speed 1.
  7. Set the timer to 2 minutes and mix on Speed 1 (no reverse) Slowly add the soy sauce, cornflour (mixed with chicken water) and the lightly beaten eggs through measuring cup hole.
  8. Serve with extra salt and pepper (if desired) and top with chopped spring onions.

Tip

Use reserved chicken water to make soup extra watery if desired
