Ingredients

Cream of Asparagus Soup

  • 30 g unsalted butter
  • 4 shallots, roughly chopped
  • 2 cloves garlic, peeled
  • 1 large potato, peeled roughly chopped
  • 1 litre water
  • 2 tablespoons TM vegetable stock concentrate
  • 2 tablespoon dill, fresh
  • 3 bunches asparagus, roughly chopped
  • 125 g cream
  • freshly ground pepper, to taste
  • Extra dill, to garnish

Recipe's preparation

  1. Chop shallots & garlic on speed 4 for 2 sec.  Scrape down bowl.  Add butter.  Cook for 2mins at 100 C on speed 1.  Add potato, water, stock & dill.

    Cook 100 C for 20 mins speed 1-2.

    Add roughly chopped asparagus and cook for further 100 C, 8-10 mins, speed 1-2.  Check that asparagus is tender.

    Increase speed to 9, process for 1-2 mins until smooth.

    Adjust seasoning with salt & freshly ground pepper.

    Add cream.  Mix low speed.

    Garnish with fresh dill.

Tip

Use 2 large potatoes for a thicker soup.

    Did not taste like asparagus.  The predomient taste was the garlic and shallots.  A good consistancy, I used one very large potato and 750g of water.  I presume that it was four shallots?  Not spring onion?  I mean the brown skinned shallots, not green spring onion?  I even only put in one garlic clove.  Added only one tablespoon of stock and it was not salty at all.  Sorry it did not turn out.

    I found it a bit too salty with two tablespoons of stock paste too. Was otherwise really yummy. The consistency with two potatoes was perfect.

    This was a little bit salty for my family I would maybe use only 1 tablespoon of stock and taste test after.  But a very nice soup. I recommend it.
