Ingredients

Soup

  • 50 g Parmesan cheese
  • 50 g olive oil
  • 50 g Butter
  • 2 clove garlic
  • 150 g onion, cut into quarters
  • 1 tsp salt
  • 1/4 tsp ground white pepper, to taste
  • 800 g cauliflower, cut into florets
  • 900 g water
  • 1-2 tbsp vegetable stock concentrate
  • 50 g sour cream
  • 15 g Dijon mustard, to taste
  • smoked paprika, for garnishing

Recipe's preparation

    Method:
  1. Place parmesan cheese into bowl and grate 10 seconds speed 10. Set aside.

    Clean and dry bowl.

    Add garlic, onion, olive oil & butter and chop 3 seconds speed 6.

    Scrape down sides of bowl well.

    Saute for 5 minutes, 120 deg speed 1.

    Add water and chicken stock concentrate.

    Insert simmering basked into bowl and add approx. 1/2 the cauliflower.

    Place lid into position and sit varoma dish on top, adding remaining cauliflower.

    Cook for 25 minutes, Varoma speed 1.

    Empty cooked cauliflower into mixing bowl and place lid and MC into position.

    Blend for 1 minute, starting at speed 5 and gradually increasing to speed 7, until smooth.

    Add sour cream, mustard and parmesan cheese.

    Mix for 20 seconds speed 5.

    Serve with a dusting of smoked paprika and a side of crusty bread.

Tip

Note: This makes a large volume of soup, almost 2 litres.

For dairy free omit the cheese and sour cream. The soup is creamy and full of flavour on its own.

Chicken stock concentrate can be used in place of the vegetable stock concentrate.

Cooking time can be reduced by chopping the florets into small pieces.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
