Ingredients

Soup

  • 1 med carrot, peeled and roughly chopped
  • 1 stick Celery, chopped
  • 375 grams potatoes, peeled and chopped
  • 500 grams chicken stock
  • 1 corn cob, (or small can of corn), corn niblets cut from core
  • 300 grams Seafood marinara mix
  • 100 mls Cooking cream
  • 1 tablespoon chives, chopped
  • 1 tablespoon chopped parsley
  • Salt & pepper to taste

Recipe's preparation

    Method
  1. 1. Place carrot, celery and potatoes in Closed lid"Closed lid" .

    2. Chop sp 4 /15 seconds.

    3. Add corn niblets and stock and set to Varoma / sp1 /  15 minutes

    4. Scoop out 1/2 veggies and set aside, then blend remainder sp 4.5 / 15 seconds, until smooth.

    5. Return set aside veggies, seafood, cream and chives to bowl.

    6. Cook 100C sp Gentle stir setting"Gentle stir setting" /  5 minutes or until seafood is cooked.

    7. Season to taste, sprinkle with extra chives and a squeeze of lemon, if desired.

    Nice, simple and quick soup for a busy weeknight. I felt the finished product needed a bit of a flavour boost, so I added a little grated cheddar and lots of fresh parsley. Yum, thanks for sharing!
