Ingredients

  • 1/2 onion
  • 2 carrots, roughly chopped
  • 1 garlic clove
  • 2 large chicken breast, cut in half
  • 600g water
  • 100g frozen corn
  • 1 tsp curry powder
  • as much black pepper as you like
  • 2 tblsp veggie stock
  • 1 diced zuchinni (optional)
  • 100g risoni pasta (optional)

Recipe's preparation

  1. Place onion and garlic into mixing jug and chop 3 sec/sp 7. Then cook 3 mins/varoma/sp 2 (with a small bit of butter)

  2. Add roughly chopped carrots and chop again 2 sec/sp 5.

  3. Add everything else, except corn, zuchinni and pasta, and cook 15mins/varoma/reverse sp 1. As the chicken cooks it will start to shred apart. If your chicken isn't quite shredded enough then for the last 10 sec turn up to reverse sp 4.

  4. After 15 mins add the corn, zuchinni and pasta and cook for a further 5 mins/100C/reverse sp 1. (At this step I needed to drain off some liquid into a bowl as I had too much in my jug. I then added it back in later).

  5. If everything is cooked, serve with some crusty bread.....yum!

    Soooo good!!! Used 100g of angel hair instead and left out zucchini because i didnt have one. The best!!!

    This soup is so quick and delicious!! Freezes great too, perfect for lunches through the week. I add cooked rice at the end instead of the risoni. I also throw in some frozen peas with the zucchini instead of corn. Thanks for sharing such an amazing recipe!

    I would call this a chowder rather than a soup as it was so thick. My family loved it and made a very filling meal I added really heaped teaspoon curry powder and wasnt over spicy. I didn't need to take any liquid out in last step.

    Perfect combination of everthing. I cooked the last 5mins in forward speed and shredded all the chicken....perfecto!

    Just made this for extended family lunch. Easy, very yummy and well received!
    Unfortunately the chicken didn't shred very well so I would chop it smaller next time. Also used rice vermicelli noodles and found I had to add about 400g more water to keep it more soupy.

    Such a yummy and easy meal. Big hit with my family including mst 8 & mst 9.
    Variations that I did;
    6 cloves of garlic (we have a house full of colds 😷) - step 1.
    100g of quinoa instead of Risoni pasta (gluten intolerant) & 1tsp of turmeric powder both added in at step 3.
    I used a zucchini and cooked as per above directions.
    Was really delicious & will become a regular at our house.

    What a great soup! I made it for lunch. Used chicken thighs as I didn't have breasts. Also didn't add the curry powder because I wanted my kids to eat it. Added eggplant and cabbage instead of pasta. Super delicious! Just what I needed. Thanks.

    I love this soup!! I make it Sunday night for lunches or light teas for the week.  However I do use chicken tenderloins, increase the water and reduce the rissoni, otherwise it was nearly a mornay. A quick, simple and very tasty soup. Thanks for sharing.
