Ingredients
- 1 package McKenzies Italian Soup mix, (You will need about 1/3 to 1/2)
- 1 --- good size chunk of ham, diced, ham off the bone
- 1 potato, peeled, diced
- 1 carrot, peeled, roughly chopped
- 1 stalk of celery, chopped
- 3 tablespoons tomato paste
- pasta, (I use San Remo gluten free)
- 1 onion
- water
- 1 dash butter/EVOO
- 1 tablespoon TM veggie stock paste

Place about a third to half a pack of McKenzies Italian soup mix into a bowl and cover with warm water.
Chop about a 1.5cm thick slice of Ham off the bone. You want about 2 cups worth or a bit more. Leave a few peices with skin on for extra flavour.
Peel and roughly chop the onion. place in TM bowl, speed 7 for 5 seconds. Add oil/butter, ham and sautae. 10 mins, speed soft, reverse, varoma temp."Counter-clockwise operation" "Gentle stir setting"
add about 1L of water (or to 2 cm below fill line), stock, tomato paste, lentils and cook, speed soft, reverse, varoma 30 mins
Add Potato cook, continue for another half hour
Add carrot, continue for another half hour
Add celery, cook as above for another 30 mins.
Pop a handful of dry pasta into a casserole dish, pour the soup over top and place the lid on. Allow the soup to stand for about a half hour before serving.
Serve with a sprinkle of salt and a squeeze of lemon, lime or grapefruit.
Tip
This can be served as a meal, which would serve about 4 adults with some crusty bread. It could also be served as a side dish, and could suit up to 8 people.
