- 150 g pumpkin, roughly chopped
- 1 potato, quartered
- 2 carrots, roughly chopped
- 1 brown onion, halved
- 1 garlic clove
- 1 litre water
- 200 g red lentils, rinsed
- 40 g TM veg stock
- 1 teaspoon salt, to taste
- 15 g olive oil

Add onion and garlic to bowl, chop 3 sec speed 5.
Scrape down sides, add olive oil and saute 3 mins 100 degrees speed 1.
Add remaining veg (pumpkin, carrots and potato) and chop 3-4 sec speed 5.
Add water, lentils, stock and salt and cook for 1 hour 100 degrees speed 0.5 with simmering basket on top instead of measuring cup.
Tip
If you wanted it to look a bit fancier you could hand slice the carrots and add them after chopping the other veg.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Super easy and very tasty. I used sweet potato instead of potato as it was what I had on hand and it turned out delicious. This will be a regular on my “soup list” .

Absolutely lovely recipe. So easy to follow and flavorsome. I used home made stock instead of water.
Just made thus to use up the vege drawer.
Pumpkin, Sweet Potato, Shallots, Carrots and Brocolli made it into mine.
Added 150ml cream in at the end of cooking and blended on speed 10 for 30 secs at the end for added creaminess.
Yummy soup with subtle flavours. I added shredded roast chicken breast and plenty of pepper.
This is a lovely soup, I added a couple of dessert spoons of Tomato paste and a cup of frozen peas. I used Kent pumpkin and left the skin on. my family were affected by the recent storms so I thought it would be a great lunch on a wet, miserable day.
