Ingredients

Middle Eastern Lentil Soup

  • 2 medium onions, skinned and halved
  • 6 garlic cloves, skins removed
  • 35 grams olive oil
  • 350 grams split red lentils, washed
  • 1100 grams water
  • 2 teaspoons ground cumin, or to taste
  • 1 tablespoon vege stock concentrate
  • 2 teaspoons dried crushed chillies, or to taste
  • salt and pepper to taste
  • juice of 1 lemon, to serve
  • handful of flat leaf parsley, to serve

Recipe's preparation

    Middle Eastern Lentil Soup
  1. Chop garlic and onion for 4 seconds / speed 6

  2. Saute garlic and onion for 2 minutes / 100 degrees / soft speed

  3. Add lentils to TM bowl and saute for 2 minutes / 100 degrees / soft speed

  4. Add water, vege stock concentrate, ground cumin and crushed chillies and cook for 30 minutes / 100 degrees / soft speed

  5. Add salt and pepper to taste.  Serve with lemon juice and flat leaf parsley.....delicious!

Tip

The soup freezes really well.  You may need to add a little extra water when reheating the soup from frozen if the soup is too thick for your taste.

    Easy and delicious!  I made tonight for a family dinner.  I left out the chillis, used 4 cloves garlic and1 tsp cumin and the kids LOVED it!! I had some boiled rice that I stirred though also.  Yum!  I will be making again very soon.

    Very easy.  I only added a 1/2 tsp of chilli because I don't like spicy food but found it to be pretty bland so added extra salt and pepper.  My husband then added a whole tsp of chilli to his serve and thought it was wonderful.
