Ingredients

  • 20 g olive oil
  • 15 g Butter
  • 1 Onion (quartered)
  • 2 cloves garlic
  • 3 cm ginger (peeled)
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 500 g parsnips (peeled and cubed, 1cm)
  • 30 g Vegetable stock paste, (see Basic Cookbook)
  • 750 g water
  • 200 g full cream milk
  • 2 tablespoons double cream or thick plain yoghurt
  • salt and pepper to taste
  • 1 handful chopped almonds
  • 1 handful pepita seeds

Recipe's preparation

  1. Toast chopped almonds and pepita seeds

    5 mins / Varoma / 0.5 no MC

    Set aside.

    (N.B. All further steps require MC on)

  2. Chop onion, garlic and ginger 4 sec / speed 5

  3. Add oil and butter and saute

    3 mins / 120degC / speed 1

    Scrape down sides.

  4. Add cardamom, cumin and cayenne pepper and saute

    1 min / 120degC / speed 1

    Scrape down sides.

  5. Add parsnips and stir

    10 sec / speed 2 Counter-clockwise operation"Counter-clockwise operation"

  6. Add vegetable stock paste and water, season with salt and pepper to taste, and cook

    20 min / 100degC / speed 1

  7. Blend slowly, starting at speed 5

    1 min / speed 5-9, increasing speed gradually

    Scrape down sides.

  8. Add milk and stir

    2 min / 60degC / speed 3

  9. Serve with a swirl of cream/yoghurt, toasted nuts scattered on top and cracked pepper.

Tip

N.B. This quantity is for the TM5.  Before cooking in the TM31, you will need to reduce quantities.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     I loved this recipe so much! Very simple and very tasty. The only change I made was to use coconut cream instead of full cream milk. and I forgot to serve the roasted nuts with it but did sprinkle on some ginger coconut flakes that I found at The Source and that worked well!
