Ingredients

  • 2 onions (quartered)
  • 2 cloves garlic
  • 6 sprigs parsley (leaves only)
  • 12 sprigs mint (leaves only)
  • 30 g olive oil
  • 250 g moghrabieh couscous
  • 2x400g can diced tomatoes
  • 60 g pistachios
  • 30 g pine nuts
  • salt and pepper to taste

Recipe's preparation

  1. Toast nuts 6 mins / Varoma / speed 0.5 no MC.

    Set aside.

  2. Chop herbs (reserving a few mint leaves for serving) 5 sec / speed 7 with MC.

    Set aside.

  3. Chop onion and garlic 4 sec / speed 5 with MC.

    Scrape down sides.

  4. Add oil and saute 3 min / 120degC / speed 1 with MC.

    Scrape down sides.

  5. Add couscous and tomatoes and cook 20 mins / 100degC / speed 1.5 Counter-clockwise operation"Counter-clockwise operation" with MC.

  6. Add herbs, salt and pepper to taste, stir in loosely with spatula, then stir 10 sec / speed 1.5 Counter-clockwise operation"Counter-clockwise operation" with MC.

  7. Serve with nuts and reserved mint leaves scattered on top.

Tip

To halve recipe, reduce cous cous cooking time to 17 minutes.

Substitute almonds for pistachios and coriander for mint.

Substitute bourghal wheat for cous cous.

    Makes quite a large volume - we used as a side dish for 3 people and we had more than half left over. Seemed unusual not using any water to cook the couscous however it worked using the canned tomatoes and tasted quite nice. Thank you for the recipe
