Pea Zucchini Mint Soup
- 50 g coconut oil
- 1 red onion, Halved
- 1 zucchini, Cut into Pieces
- 500 g frozen peas
- 1 tablespoon veggie stock paste
- 500 g water
- 1 Large Handful of Fresh Mint

Place the Oinion Halves, Zucchini Pieces and oil in the bowl.
Chop 5 seconds Speed 5. Scrape down bowl.
Cook 5 minutes 100c Speed 1.
Add Peas, Water and Stock Paste
Cook 10 minutes 100c Speed 1 (check peas are cooked)
Add mint. Blend 2 minutes Speed 8 or until smooth to your liking
Pea Zucchini and Mint Soup
Tip
This a lovely smooth fresh soup. I use coconut oil because I like it with the sweet taste of peas. Oil or butter would work too.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Absolutely loved this soup - so tasty! With no cream in it, it is so healthy but totally full of flavour. I love the mint in it and the coconut oil - I used about half of the recommended amount of oil and thought it was enough! Thanks so much for sharing this recipe - it will be a regular for me!
